You can use any cultivated mushrooms for this recipe, Button, Portobello, Oyster, Shi-take, etc.
Slice the mushrooms. Rind 10 slices of thin bacon, make 8 bacon rolls and cut up the rest. Peel and cut up ½ Kilo tomatoes. Melt a little butter in the pan and fry the mushrooms lightly, then add the cut-up bacon. Meanwhile grill the bacon rolls. In another pan, lightly fry tomatoes and cook for a few minutes. Make up a sauce with a little butter, flour and fresh milk, then add the mushrooms and season with salt or Soya sauce. Garnish with the bacon rolls and chopped parsley or chives.
